What can be the reason for the presence of lactic acid bacteria in a salad (crab salad, for instance)?

Lactic acid bacteria are naturally associated with nutritious environments such as milk and plant products. This explains their presence in this case on the lettuce or other plants. Due to the presence of vinegar (acetic acid) coupled with a low temperature the bacteria will not grow very fast and therefore not cause the product to undergo spoilage.
