What are the functions of the different vitamins?

Water soluble vitamins, especially the B-vitamins serve as co-factors in enzyme reactions in metabolism of carbohydrates, proteins and fatty acids. Thus, they are needed to extract energy out of food and to help synthesise the building blocks for body tissues. The fat soluble vitamins have a number of different functions.
