Obtained from chlorine and sodium chlorite.

Function & Characteristics:
Bread enhancer. It stabilises the structure of leavened bread. Bleaching agent for flour.

Bread but not often used.

Acceptable daily intake (ADI) :
Up to 30 mg/kg bodyweight

Side effects:
None known.

Dietary restrictions:
None. 926 can be used by all religious groups, vegans and vegetarians.
