E523 : Aluminium-ammonium sulphate

Prepared from natural aluminium sulphate.

Function & Characteristics:
It is used as acid source in baking powder for bakery products, baked at high temperature. It also stabilises colours.

Industrial baking powder

Acceptable daily intake (ADI):
Up to 0,6 mg/kg bodyweight.

Side effects:
Aluminium inhibits the uptake of B-vitamins. It may also influence liver function in high concentrations. However with use of E523 the concentrations are too low.
