E363 Succinic acid

Natural acid, present in most fruits and vegetables. Commercially synthesised from acetic acid.

Function & characteristics:
Acidity regulator and flavour enhancer.

Confectionery, bakery products, etc.

Acceptable Daily Intake:
No limit.

Side effects:
None known; it is metabolised by the body (it is a normal component of all body cells).

Dietary restrictions:
Succinic acid and succinates can be used by all religious groups, vegans and vegetarians.
