Natural acid present in beets and sugar cane (juice).

Function & characteristics:
Acidity regulator, aroma compound and some other specific uses.

Acceptable Daily Intake:
Up to 5 mg/kg body weight.

Side effects:
None known, it is metabolised in the body or excreted in the urine.

Dietary restrictions:
Adipic acid and adipates can be used by all religious groups, vegans and vegetarians.
