E35 2 (i) Monocalcium malate
E352 (ii) Calcium malate

Calcium salts of malic acid (E296), a natural acid present in fruits.

Function & characteristics:
Calcium malate is used as a thickener and flavouring.

Ice cream, fried products, marmalade, etc.

Acceptable Daily Intake:
No limit, but the D,L - and D-isomers are not allowed in infant food, as infants lack the necessary enzymes to metabolise these compounds.

Side effects:
None known.
