Origin:
Naturally occurring mineral. Also present in nearly all vegetables.

Function & characteristics:
White powder used as a preservative and against fading of natural colours.

Products:
cheese, meat and meat products, pizza

Acceptable Daily intake:
Up to 3.7 mg/kg body weight.

Side effects :
Nitrates have no side effects, but by heating or in the stomach it may be converted to nitrite (E250) .

Dietary restrictions :
None, nitrites and nitrates can be consumed by all religious groups, vegans and vegetarians
